My kids didn’t enjoy eggs until they tasted free range eggs. Instagram is full of cute pics with little kids and chickens, but there are some major health concerns to avoid. With all the current news on salmonella from backyard poultry eggs I found some good tips to keep in mind:

  • Washed eggs in the refrigerator - 2 weeks.

  • Unwashed eggs on the counter - 4 weeks.

  • Unwashed in the refrigerator - 2-4 months.

  • You can use a cleaning pad to wash debris off the egg without removing the bloom and having to consider it a washed egg.

  • Healthy Yokes will be a bright orange. If they are not the chicken may not be healthy.

  • If you wash eggs, use 90 degree water.

  • Many would disagree, however it is safer to wash and keep eggs labeled in the refrigerator. Bottom line salmonella is less likely to develop in refrigeration.

  • Disinfect hands, shoes, clothes and utensils after handling chickens and/or eggs.

  • Wash the countertop, dishes, utensils after they’ve touched raw eggs.

  • Never kiss and cuddle the chickens.

  • If you use Chicken Manure as compost it needs 45-60 days to curate healthy.

  • If you question whether an egg is still good, you can drop an egg in a bowl of cold water. Fresh eggs will sink and bad eggs will float.

It's hard to ignore the many health benefits of farm fresh eggs including: less cholesterol, less saturated fat, increased vitamins A, E, and D, more omega-3 fatty acids, more beta carotene and of course better taste! Farm fresh is best, just stay safe and informed!
